Ingredients:
- 1 1/2 c whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 4 large (very ripe) bananas
- 3/4 c sugar
- 1 egg (beaten)
Directions:
- Preheat oven to 350 and coat 12 muffin tins with non-stick spray.
- In small mixing bowl sift together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In separate bowls puree one banana and mash the other three (I used a potato masher but a fork would work fine as well).
- In large mixing bowl, combine bananas, sugar, and egg.
- Fold flour mixture into banana mixture; just until combined (do NOT over stir).
- Spoon into 12 muffin tins and bake for 20 minutes or until inserted toothpick comes out clean.
